Apple syrup Loukoumades with sautéed tomatoes cherries and fig

Ingredients

For the syrup

200gr Water

250gr Crystal sugar

1 Lemon cut in hal

2-3 slices Red Apple 

For loukoumades

250gr White flour

275 ml Water (room temperature)

19gr Dried yeast

60gr corn flour

2gr table salt

3 gr sumac

38ml liquid red food coloring

2tbsp olive oil

For the Garnish

1 pocket tomato cherries

Chopped Parsley

Chopped chive

Soft cheese(or filadelfia)

Dried figs

10 walnuts

Salt and ground black pepper

For the frying

1lt sunflower oil

Preparation

Prepararion 1 : Loukoumades mix

In a bowl mix the dried yeast with the water and whisk it until the yeast is dissolved.
In a deep bowl add all the other ingredients (for loukoumades) with the yeast mixture, and then mix it up.
Leave it to rest for 30-40 minutes and cover it with a towel.

Preparation 2: apple syrup

Add all the “syrup” ingredients in a saucepan and cook them for 3-4 minutes until it has a thick consistency.
When it’s ready, leave it to cool down.

Preparation 3: frying loukoumades
Heat sunflower oil in a big saucepan to 350 degrees (or 170 degrees oC).
Place a soup spoon in a glass of olive oil near the batter.

Scoop up about 1 -2 tbsp of dough per puff with an oily spoon and drop it in and roll it back into the spoon to create a round shape.

Drop the dough balls into the hot oil in batches, oiling the spoon each time you make a dough ball.

Fry iuntil golden brown colour on the bottom, and roll them over to cook the other side, 2 to 3 minutes per batch.

Gently set the loukoumades aside to drain on paper towels.

Service time
In a pan sauté the tomato cherries with Agria Gea olive oil for 1-2 minutes and remove from the fire.

Add the chopped parsley and chive and season.

Deep the loukoumades into the syrup for 5-6 seconds.

Place in a plate the loukoumades and crush the walnuts on top of them.

After adding the sautéed tomatoes and the fig with the soft cheese.

Pour on a little bit of extra virgin olive oil Again Gea and sprinkle a little bit of extra parsley for taste and decor.
