Leek and smoked bacon soup with red apple and British pak Choi

Ingredients
1kg leeks,rinsed and sliced
1 medium potato,peeled and finely sliced
1 white onion
1.136lt milk (full fat)
50-100gr butter
150ml Extra Virgin Olive Oil Agria Gea
Salt and freshly ground black pepper
2tbsp ground garlic
1 tbsp ground ginger
1 tbsp ground nutmeg
For the topping
1-2 red apples , very finely sliced
Salad cress
3-4 leaves British pak Choi,very finely chopped
6 slices of smoked bacon
Preparation
Preheat the oven to 180*C /350*F. Bake the bacon for 20-25 minutes until it's crispy!
Heat the Extra Virgin Olive Oil in a medium saucepan over a low temperature. Add the leek, the onion, and the potato and cook, stirring occasionally, for 5 minutes. Next, add the milk and the seasonings.
Bring to the boil over high heat for 10 -15minutes and then reduce the temperature to low again and simmer until the potato becomes soft.
In the end, turn the heat down, add the butter and blend the mix. You can also strain it through a sieve if you want it really smooth.
To serve, chop very finely sliced the apple and the Pak Choi!
